The Origins of Pho
Pho (pronounced ‘fuh’) originated in northern Vietnam in the early 20th century, most likely in the Nam Dinh province near Hanoi. The dish is believed to have been influenced by Chinese noodle soup traditions and French colonial culinary practices — particularly the French fondness for beef, which was uncommon in traditional Vietnamese cuisine before colonization.
Pho’s Journey South
When Vietnam was divided in 1954, millions of northerners migrated south, bringing pho with them. In Saigon (now Ho Chi Minh City), the dish evolved significantly. Southerners added fresh herbs, bean sprouts, hoisin sauce, and lime, creating the sweeter, more garnish-laden version of pho that is most familiar to the Western world today.
Pho Comes to America
The Vietnamese diaspora following the fall of Saigon in 1975 brought pho to American shores. Vietnamese immigrants opened restaurants across the United States, and cities with large Vietnamese communities — particularly in California and Texas — became hubs for authentic pho culture. Over the following decades, pho transcended its immigrant origins to become a mainstream American food phenomenon.
